GEISHA

Geisha (also spelled Gesha) is a highly sought-after and premium coffee variety, originally from Ethiopia and later popularized in Panama. Known for its exceptional quality, Geisha beans are celebrated for their complex, vibrant flavors, often featuring bright acidity, floral notes, and fruity undertones like jasmine, bergamot, and tropical fruits. It is a low-yielding variety that requires careful cultivation, making it more expensive than many other coffee types. Geisha is often considered one of the best coffee varieties in the world due to its unique and refined flavor profile, which is highly prized in specialty coffee circles.

SANDI ESTATE| 1500-1700 MASL

Sandi Coffee Estate is a family business dedicated to supplying the best specialty coffee that Panama has to offer. The estate’s coffee is grown at altitudes exceeding 1,500 meters (approximately 1 mile) above sea level, where cooler temperatures and improved drainage result in a higher concentration of flavors. This unique elevation allows for the cultivation of beans with deeper, more compelling taste profiles.

The estate is committed to producing the highest quality coffee, with a focus on exceptional flavors and diverse varieties. The specialty beans meet the highest standards, ensuring an unparalleled coffee experience. From the estate’s expertise to the cup, the goal is to deliver the perfect balance of rich flavors and aromas.

Sandi Coffee Estate’s Geisha coffee is grown on its farm in Piedra Candela, Chiriquí, and the estate cultivates over 20 different coffee varieties across three farms, each contributing to the unique quality of the beans.

In addition to its farms, Sandi Coffee Estate also operates a specialty coffee shop called Tres Cosechas, located in both Panama and Costa Rica. This enables the estate to share its passion for exceptional coffee with coffee lovers in both countries.

NATURAL

The natural process, also known as the dry process, involves drying whole coffee cherries with their fruit and skin still intact, allowing the beans to absorb the sugars and flavors from the surrounding pulp. This method enhances fruity, sweet, and complex flavor profiles, often producing vibrant and full-bodied coffees. While it requires meticulous care to prevent fermentation or defects and depends heavily on optimal weather conditions, the natural process is highly valued for creating unique and flavorful beans that stand out in the specialty coffee world.

MEDIUM

A medium roast coffee strikes a balance between the bright, fruity flavors of lighter roasts and the rich, chocolaty notes of darker roasts. Roasted to an internal temperature of around 410–430°F (210–220°C), it develops a fuller body and smoother taste with moderate acidity, often showcasing a harmonious blend of the coffee's origin flavors and subtle caramelization. In terms of caffeine content, medium roast beans retain slightly more caffeine than dark roasts due to their denser structure but generally contain a bit less caffeine than light roasts. A typical 8-ounce serving of medium roast coffee provides around 95 milligrams of caffeine, though this can vary depending on brewing method and the specific beans used.

We highly recommend using the filter or pour-over method for our Geisha coffee to fully appreciate its delicate and vibrant flavor profile. This method allows for precise control over water temperature, brewing time, and extraction, ensuring that the coffee's complex notes—such as jasmine, tropical fruits, and bright acidity—shine through without being overpowered.
