RED BOURBON

Pacamara is a unique coffee variety known for its large bean size and exceptional cup quality. A hybrid of Pacas and Maragogipe, it offers a rich, complex flavor profile with bright acidity, creamy body, and notes ranging from citrus and florals to chocolate and spice. Grown at high elevations, Pacamara thrives in specialty coffee regions, producing distinctive and memorable brews.

Bambito Estate, a renowned coffee farm with deep roots in Panama’s coffee heritage. When Bambito was on the verge of being sold, Iván and his mother stepped in, determined to honor the legacy his great-grandfather built. The farm has won numerous awards at the Best of Panama competition, is known for its commitment to excellence.

Today, their dedication brings us La Pollera, our exquisite Bourbon variety, grown with passion and care at Bambito Estate. This is more than coffee, it’s history in every cup.

NATURAL

The natural process, also known as the dry process, involves drying whole coffee cherries with their fruit and skin still intact, allowing the beans to absorb the sugars and flavors from the surrounding pulp. This method enhances fruity, sweet, and complex flavor profiles, often producing vibrant and full-bodied coffees. While it requires meticulous care to prevent fermentation or defects and depends heavily on optimal weather conditions, the natural process is highly valued for creating unique and flavorful beans that stand out in the specialty coffee world.

LIGHT MEDIUM

Light-medium roasting strikes the perfect balance between preserving the bean’s natural flavors and developing a smooth, well-rounded taste. This roast level enhances sweetness and complexity while maintaining bright acidity and delicate aromatics.

FILTER RATIO 1:16

We highly recommend using the filter or pour-over method for our Red Bourbon coffee to fully appreciate its delicate and fruity flavor profile. This method allows for precise control over water temperature, brewing time, and extraction, ensuring that the coffee's complex notes—such as strawberry, tropical fruits, and bright acidity—shine through without being overpowered. Remember to adjust to taste.
